Sweet Torta From Gourds
1/2 lb yellow squash
1/2 c milk
8 oz cheddar cheese
2 oz butter
1/4 c sugar
1/8 t ground ginger
1/2 t cinnamon
6 eggs
1/2 c milk
6 threads saffron
1 double 9" pastry shell
2 T sugar
1 T rosewater
Grind your gourds, then boil in milk, and strain when half-cooked. Add cheese, butter, sugar, ginger, cinnamon, six eggs, a little milk, and saffron. Blend.
